NALEŚNIK GRYCZANY BEZ MĄKI I JAJEK

Dzisiaj rano obudził mnie zapach świeżo zaparzonej włoskiej kawy. Otwieram oczy, a tu czeka na mnie pyszny naleśnik z białej kaszy gryczanej z twarogiem i borówkami przygotowany przez mojego mężczyznę. Naleśnik był wprost idealny: delikatny, miękki a ciasto rozpływało się w ustach. Jest troszkę zabawy z przygotowaniem takiego naleśnika, ale jego smak wynagradza wszystkie trudy. Przede wszystkim naleśnik jest doskonałą alternatywą dla osób będących na diecie bezglutenowej, czy wegańskiej (wtedy tylko nadzienie naleśnika trzeba przygotować inne).

Składniki:

na ciasto naleśnikowe:

  • kasza gryczana /400g/
  • woda / ok 2 litrów/
  • len mielony odtłuszczony /60g/
  • olej rzepakowy /50ml/
  • mleko roślinne (u mnie ryżowe) /ok 400ml/

na nadzienie:

  • twaróg chudy /500g/
  • borówki amerykańskie / 400g/
  • ksylitol /2 łyżki/

Przygotowanie:

Kaszę gryczaną płuczę na sitku pod bieżącą wodą. Przekładam ją do garnka i zalewam wodą (tak aby woda przykrywała ziarna kaszy). Zostawiam do napęcznienia na 24h. Po kilku godzinach mieszam ziarna i w razie potrzeby dolewam wody. Na powierzchni pojawi się piana, a woda stanie się mętna i lekko śluzowata- to normalne.

Gdy kasza napęcznieje ponownie ją płuczę, przekładam do blenera i miksuję na gładką masę.
Len zalewam ok 330 ml wody i mieszam do momentu aż konsystencja będzie przypominać budyń. Dodaję gryczaną masę, olej i mleko, a następnie wszystko miksuję. Zostawiam ciasto naleśnikowe na ok 5 minut po czym zabieram się do pieczenia. Na rozgrzaną patelnię wlewam łyżkę oleju tak aby pierwszy naleśnik nie przywarł,  potem już go nie używam. Naleśniki te smaży się nieco dłużej niż tradycyjne po ok 2 minuty z każdej ze stron.

Przygotowuję masę na nadzienie- twaróg ucieram z ksylitolem. Nakładam na upieczony naleśnik nadzienie i dekoruje go borówkami amerykańskimi, zawijam i podaję.
